200g Soft Butter
133g Icing Sugar
2 Whole Eggs
370g Flour + 50g (for dusting)
1 Tbsp Vanilla Bean Paste

Basic Sweet Dough

Make the best tarts and pies with this simple recipe.


1. Place softened butter and icing sugar together in a mixing bowl.

2. Mix with a rubber spatula or your mixer. Mix until combined without any chunks of butter.

3. Add the eggs and Vanilla Bean Paste. Continue mixing slowly (the batter can appear split like the ingredients are not combining - this is normal).

5. Add in half the flour and continue mixing. This will help combine the ingredients together.

6. Add the remaining flour into your bowl.

7. Mix until you form a perfect smooth dough. If you're not using a mixer, try to finish mixing the dough on the benchtop. Make sure to dust your bench with flour first to avoid the dough sticking.

8. Cover the dough with a tea towel or glad wrap and place the dough in the fridge.

9. Let the dough rest in the fridge for at least 1 hour.

10. Take the dough out of the fridge, add flour to your benchtop and start flattening the dough with your rolling pin.

11. You need to roll the dough larger than your tin to cover the full surface area. Do not roll your dough too thin.

12. When you have lined your tin, place it in the fridge for at least 15 minutes. This will stop the edges from shrinking.

13. You can use this sweet dough for many different tart/pie recipes.


Don’t over-mix your dough, this will make your dough shrink in its tin.

It’s important to allow your dough to rest.

You can prepare your dough in advance and keep it in a fridge or freezer. Allow more time for the dough to soften and if you mix it a little by hand, this will refresh the dough.
