Chocolate Cake
2 tsp Coffee Flavacol
2 tsp Chocolate Flavacol
2 tsp Vanilla Bean Paste
4 Cups Flour
4 Cups Sugar
½ Cup Cocoa
1 Cup Choc Chips
2 Cups Hot Water
1 Cup Oil (Canola or Soy)
4 Eggs (Size 7)
1 Cup Buttermilk
2 tsp Baking Soda
1 tsp Baking Powder
1 tsp Salt

Butterscotch Mousse
110ml Water


Springform Cake Tin (30x20cm)

Chocolate & Butterscotch Mousse Layer Cake

A delicious Chocolate & Butterscotch Mousse Layer Cake perfect for desserts.


1. Line your cake tin including sides then preheat oven to 160°C.

2. Melt chocolate chips, cocoa, sugar, water, Chocolate & Coffee Flavacol in a pot until the sugar is dissolved but do not let boil. Leave to cool for 5 minutes in a separate mixing bowl.

3. Once cooled, beat in eggs, buttermilk, Vanilla Bean Paste, oil and salt. Then, add flour, baking soda & baking powder and mix together until all ingredients are well mixed.

4. Pour your mixture into cake tin and bake for 45-60 minutes or until a skewer comes out clean once inserted into the centre of the cake.

5. For the Butterscotch Mousse... Place Easy Frost and water into a bowl and using an electric mixer, beat until it resembles a whipped cream. Mix Buttersctoch Flavacol into the crème until evenly mixed.

6. When the cake is cool, pour & spread the Butterscotch Mousse evenly on to the Cake.


Sprinkle your layer cake with Crispy Milk Choc Powerballs, chocolate bits or your favourite topping!
