4 Whole Eggs
4 Egg Yolks
120g Caster Sugar
400ml Cream
1 tsp Vanilla Bean Paste
4 Pears
50g Sliced Almond (optional)

Pear & Vanilla Tart

Impress your friends with this easy French Tart recipe.


1. Check out our Basic Sweet Dough recipe for the base of the tart and follow this.

2. Peel and slice the pears and place the slices into the tart base.

3. Place the tart base with the Basic Sweet Dough and pear slices in the fridge.

4. Preheat the oven to 150 - 160˚C.

5. Start preparing the filling by mixing together the whole eggs and the egg yolks.

6. Add the caster sugar and mix well.

7. Add the vanilla and cream, and whisk until they are combined.

8. Take the tart base out of the fridge, and pour the filling slowly on top of the pear slices to the top of the base.

9. Sprinkle the sliced almonds on top (optional step).

10. Place the tart in the oven and bake for 20 - 30 mins, or until you have a nice golden colour on top.

11. You can enjoy the tart slightly warm or cold (if you can wait).
